Our lingcod cheeks this year are from the Fv. Cold Fish, Dylan and Jack carefully cut them out while they are cleaning each fish. They are then frozen-at-sea to lock in the quality and flavor.
While halibut cheeks are more well known, lingcod cheeks are more affordable, equally as delicious and super healthy. The cheeks are skin on, packed into 1lbs packs and contain 3-6 cheek portions. When cooked, the cheeks have a similar texture to scallops and take on whichever flavor you cook into them. Each cheek is a slightly different shape and size as each fish is unique! We like to think of Lingcod cheeks as the fish version of chicken wings!
