Lingcod

Lingcod is a favourite of fish-lovers up and down the West Coast. Its white (sometimes bluish-green) meat is nicely textured and flakey, with a flavour sitting between halibut and Pacific cod. Lingcod is a great base to layer a multitude of flavours, while still holding its own distinct character.
